My Own Downtown - Cowboy Crepes
Unbelievably, crepes have been very popular in America as early as the 1930’s but it is not until recently that we have embraced “the power of the crepe!”
According to Owner, Jennifer Herman, she has spent a good deal of time traveling the United States snowboarding.
She said, “On one of our trips to Breckenridge, Colorado, I ate a crepe shop for the first time and fell in love.”
Shortly after that, Jennifer came across another crepe shop in Las Vegas and after that she was more than hooked. “I wanted a crepe every day,” she expressed. “I fell in love with savory crepes and found myself constantly thinking about owning one of my own one day.
After living in Rock Springs for a few years, Jennifer realized our community might be a great place to open the crepe shop she had been dreaming about for so long. “The response from the community when I started posting about just offering crepes as a catering option was astonishing,” she shared. “It was clear it was time to make it happen.”
Jennifer mentioned that Chad Banks, URA Manager, was the sole reason her shop to become a reality.
“He played a huge role in the opening of Cowboy Crepes,” she revealed. “If it had not been for him reaching out to the owner of the building and asking him about allowing us to share the kitchen, located in Boschetto’s, none of this would have been possible.
Jennifer and the crew enjoy reading the on-line reviews. “It is so rewarding to know you have created something that people just absolutely love,” Jennifer mentioned. Jennifer went on to say, “Everyone who either works or shops in Downtown is so welcoming and appreciative that we are here and doing what we are doing. Every business and consumer that visits Downtown is very supportive and always makes us feel like we are a part of the community.”
Knowing that they leave a great impression on customers is important to Jennifer and her crew. “As Downtown business owners, we all have a common goal and that is to make sure every consumer enjoys being in our Downtown and that they have a positive experience,” she said. “It has been really fun being a part of the combined effort that all of us Downtown business owners strive for every day.”
